Salted Pecan Caramel Bars

Caramel is one of the most unforgiving things to make by hand. Too hot and it burns. Too cool and it never sets. Get it exactly right and it becomes something close to perfect.

Ours is boiled to that precise point - soft, yielding, with a slow chew that lets the buttery flavour linger. Each bar is crowned with chopped roasted pecans and finished with sea salt, the bitterness of the nut and the bite of the salt keeping the sweetness honest.
